    3 sheets of Nori (seaweed)
    1/2 Sweet potato, cut into small cubes and baked
    1/2 cucumber, cut into matchsticks
    1/4 Haas avocado, cut into small cubes
    1/2 C sushi rice
    1 C water


Cook sushi rice as directed on package - set aside
Bake sweet potato on non-stick cookie sheet until soft (about 20-30 minutes depending on how small you cut them)
Roll sushi according to mat directions.
Garnish with low-sodium soy sauce, wasabi, pickled ginger, or chili sauce (will alter nutritional content)
