Introduction

Ingredients

    1 Green Bell Pepper
    Mushrooms (fresh - in slices and pieces)
    9 Cooked Tater Tots
    6 Large Eggs
    6 oz Ricotta Cheese (Part Skim)

Directions

You will need a medium to large size skillet, greased. Preheat it on low while you prepare the ingredients.

Chop approx one cup of green pepper (or use strips, but chopping is better!) and add this to the skillet. Cook until tender-crisp. Add mushrooms and cook until soft, about 30 seconds. BE PREPARED TO ADD THE EGGS IMMEDIATELY AFTER ADDING TATER TOTS! Break up the tater tots (either with a fork in a bowl or with your fingers!) and add them to the skillet. After beating the 6 eggs in a bowl until well blended, add them the skillet and scramble them until well blended with the peppers, mushrooms, and tater tots, and almost fully cooked. Add the ricotta and continue cooking until the eggs are fully cooked.
