Ingredients

    * *Tortillas, Mission Yellow Corn (1 tortilla), 4 serving
    * Onions, raw, 0.5 cup, chopped (remove)
    * *Cheddar Cheese fat free - Natural Cheese, 1 cup
    * Red Ripe Tomatoes, 2 tomato (remove)
    * *Hatch Green Chile Enchilada Sauce Medium,420 gram(s) (remove)
    * 4 Chicken Breast, no skin, 16 ounces (remove)

Directions

spray nonstick pan
cook chicken breasts 2 min both sides
add chopped tomato, onion, enchilada sauce
simmer 20 min
remove chicken pieces and shred
dip tortilla in the sauce, then add chicken and cheese, roll and bake at 350 deg F till cheese melts
add some more sauce and serve
