This is a yummy beef & bean enchilada recipe that I slimmed down. It's very tasty. This is a yummy beef & bean enchilada recipe that I slimmed down. It's very tasty.
Number of Servings: 4


    1/2 pound ground turkey
    1 beef bouillion cube
    1 onion, chopped
    1 green pepper, chopped
    1 cup canned black beans, drained and rinsed (optional)
    1 can Rotel
    1/3 cup water
    1 teaspoon chili powder
    1/2 teaspoon ground cumin
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1 1/2 cups Kraf 2% shredded colby jack cheese
    4 whole-wheat flour tortillas


In a skillet, cook ground turkey, crumbled beef bouillion cubes, onion, and pepper until turkey is browned and veggies are tender. Add next 7 ingredients...bring to a boil. Reduce heat and simmer for 10 min. In a 5 qt. crockpot, layer beef mixture, one tortilla, and some cheese. Repeat layers 3 more times. Cover and cook on low for 5-7 hours or high for 3 hours.
