    1 Cup Dried Black Beans
    3 Cups Boiling Water
    2 Cups Water with 3 tsp of Chicken Bouillon
    1 Can Rotel Tomatoes with Chiles
    1/4 Cup Chopped Onions
    1 Garlic Clove, minced
    2 Tsp. Olive Oil
    1 Chipotle Pepper with Adobo Sauce
    1/4 Tsp. Cumin
    1/4 Tsp. Oregano
    1/8 Tsp. Red Pepper
    2 Cups Water
    Chopped Cilantro


Wash Beans removing any stones. Place in Dutch Oven and cover with 3 Cups of Boiling Water. Bring to a boil, cook for 2 min. and then remove from heat and cover pot. Let stand for 1 hour, then drain.
Meanwhile, saute the onion for two minutes, don't let burn and then add garlic for one additional minute.
Add Beans, chile, spices, water and chicken bouillon to pan, bring to a bowl and then simmer on low for 3 hours. Alternatively, you can put in a Crock Pot and cook on low for 6 hours.
When beans are soft and done, add the Rotel Tomatoes and heat. Then take 1 to 1-1/2 cups in a blender and puree, adding back to soup to thicken mixture\. Garnish with Fresh Chopped Cilantro.
