My own version of my Mom's famous banana bread. Makes 2 medium-size loaves. My own version of my Mom's famous banana bread. Makes 2 medium-size loaves.
Number of Servings: 16


    3 med very ripe bananas, mashed
    1/2-3/4 c. sugar
    2 eggs or equivalent substitute
    1/2 c plain, nonfat yogurt
    1/4 c. skim milk
    2 c. flour
    1 t. baking soda
    1/4 t. salt
    1.5 c. fresh or frozen (thawed) blueberries


Mix first 6 ingredients together in large bowl, set aside. Mix dry ingredients together, sift if desired, and slowly add to banana mixture. Once mixed, fold in blueberries.

Pour batter into two greased, medium-sized bread pans and bake at 350 for 45 minutes or until slightly brown on top.
