    1 cup chopped onion
    1 cup chopped mushrooms
    1 cup chopped zucchini
    1 cup marinara sauce
    4 large eggs
    1 tsp olive oil
    1 tsp salt
    Black pepper to taste


Be sure to use a large non-stick frying pan for this recipe to minimize the amount of oil needed. (Calphalon works very well.)

Chop the vegetables. Heat the non-stick frying pan and add the oil. Saute vegetables on medium heat 5-10 minutes until they begin to soften. Add marinara sauce bring to a simmer, then cover and cook another 5-10 minutes until vegetables are nearly done. Add salt and pepper to taste.

Crack eggs into a separate bowl and gently slip them on top of the simmering tomato sauce with vegetables. Cover again and cook another 5-10 minutes until the eggs have reached the desired firmness.

Serves two for brunch or dinner. Goes well with whole wheat toast.
