Introduction

This recipe was created by my husband, Richard Wakefield, He added some ham to this when he made it. You could also top it with some low fat shredded cheese which will melt when you cover the pan. Ingredients

    non-stick spray
    1 baked potato
    1 egg
    2 oz low fat milk
    2 tbls salsa
    ham (optional)
    low fat cheese (optional)

    Spray a fry pan with cooking spray. Slice baked potato and add to pan in one layer. Brown potato and turn to brown on other side. Beat egg with milk and Salt and pepper to taste. Pour egg mixture over potatoes and cook until set. Spoon salsa over potates and eggs. and cover pan. Cook until salsa is hot and eggs are totally set. Slide onto a plate and enjoy!

Single serving or 2 servings with a fruit salad
