    4 tsp of olive oil
    1 cup of chopped onion
    8 cups of pre washed packaged fresh spinach leaves
    2 cups of cherry tomatoes, halved
    2 cups of sea scallops


In 10" nonstick skillet heat oil. Add onion; cook over medium heat, stirring frequently, until softened (1-2 minutes).

Add spinach and tomatoes; cook, tossing gently, until spinach is wilted, 2-3 minutes.

Push vegetable mixture ot one side making room for the scallops- Add scallops; brown quickly on all sides.

Combine scallops with vegetable mixutre; cook tossing until scallops are cooked through about 1 minute. Serve immediately.
