This is my favorite omelete. It has so much flavor, color and texture. Healthy , satisfying, unbelievably good!
I have actually Quadrupaled the recipe and made a Fritatta for a family brunch this Christmas.

Ingredients

    One whole egg + two egg whites, scrambled
    Pam cookinng spray- 1 second spray
    1/2 cup of chopped spinach
    One oz. of smoked salmon/Lox
    2 tbls. diced red onion
    1/4 of an avocado, chopped
    One Tbls. shredded parmesan cheese
    a dash of black pepper
    1/4 cup of chopped tomato
    1 tbls. of fresh parsley to garnish

Directions

Set stove top burner to Med. - Med. /Low.
scramble the eggs.
add the blk. pepper to the eggs and mix
Spray an omelete pan with the Pam Cooking Spray
Pour eggs into the pan.
Allow the eggs to set as you swirl the mixture around the pan, lightly pulling sides of omelete to the center and swirling to fill in the gap. This allows the eggs to cook slowly.
Turn your stove top to low.
Turn on your Broiler and broil the top of the eggs til set. return to stove top.
Add your Spinach, Salmon, Onions, and Avocado to the top of the Omelete.
Fold in half and slide onto a plate. Add the cheese to the top and allow a minute to melt. Then add the tomatoes and some parsley to garnish.
