Number of Servings: 1


    * Egg, fresh, 1 medium
    * Egg white, 1 serving
    * Spinach, frozen, 0.5 cup
    * Broccoli, fresh, 0.25 cup, chopped or diced
    * Pepper, red or cayenne, 1/8 tsp (optional)
    * Extra Light Olive Oil, 0.25 tbsp (or use a cooking spray to save about 25 calories)
    * Flax Seed Meal (ground flax), 1 tbsp


Prepare the pan with olive oil or cooking spray and heat to cooking temperature. Put the vegetables into the pan. Crack the two eggs in a separate bowl, discarding one of the yolks. Beat the eggs and pour over the veggies. Add flax seed and salt and pepper if desired. Cook to desired texture (approximately 5 minutes)
Makes 1 serviing.
