    * Canola Oil, 1 tbsp
    * Butter - Ghee, 2 tsp
    * Cream of Wheat Cereal, 2 cups
    * Mixed Vegetables, frozen, 1 package (10 oz)
    * Onions, raw, 1 medium (2-1/2" dia), chopped
    * Cashew Nuts, dry roasted (salt added), .25 cup, halves and whole
    * Ginger, minced 2 tbspn
    * Green chile, minced, 1
    * Mustard seeds, 1 tspn
    * Chana dal, 1 tspn
    * Curry leaves, 5-8
    * Lemon juice, .5 cup
    * 4 cups boiling water
    * Salt to taste


Heat ghee in a large saucepan, fry cashews till golden. Remove cashews and set aside . Add Cream of wheat to the remaining ghee. Roast till it is opaque and lightly toasted. Remove cream of wheat and set aside.

Add oil to same pan, heat. Add mustard seeds and dal. When mustard seeds pop, add onions, ginger, curry leaves and minced green chile. Saute over medium heat till onions are golden.

Add frozen mixed vegetables and salt. Saute over medium heat till the vegetables are thawed and cooked (about 5-10 mins). Add cream of wheat and cashews to the pan. Stir so they are evenly mixed with the vegetables.

Mix lemon juice and water and pour boiling water into pan (very carefully) while stirring constantly. Once water is mixed in, cover and let sit for 5 mins till cream of wheat is fully cooked.
