    one half cup uncooked quinoa, one half cup chopped onion, 1 clove garlic, 2 cups chopped fresh spinach, 1 cup skim milk, 1 teaspoon olive oil, one half cup sharp cheddar cheese, 4 large eggs or substitute to equal volume, cooking spray for pie pan. salt and pepper to taste.


Cook one half cup quinoa as package directs, (one half cup will make about 1 cup cooked). put olive oil in large sauce pan. Cook onion until soft and clear (not brown). add crushed garlic and 2 cups chopped fresh spinach. mix and turn off your heat. whisk together 1 cup skim milk with 4 eggs. add egg mild and cooked quinoa to the pan. mix again to incorporate. spray pie pan with cooking spray before filling with mixture. Top with one half cup of any sharp cheese. Cover with foil that you spray with cooking spray. bake for 30 minutes covered. finish baking uncovered until slightly browned. 350* oven. makes 6 nice slices.
