Introduction

A great tip is to let the dough sit in the loaf pan for about half an hour to let the leavening do its magic.

Also, if you don't have buttermilk, just put 1 tablespoon of lemon juice for 1 cup of regular milk and let it sit for 15 minutes in the fridge. Currants instead of raisins are a great option if desired.

Ingredients

    3 cups all-purpose flour
    1 tbsp baking powder
    1/3 cup sugar
    1 tsp salt
    1 tsp baking soda
    2 cups buttermilk
    1/4 cup butter, unsalted
    3/4 cup raisins, unpacked

Directions

1. Preheat oven to 325 degrees. Grease a 5x9 inch loaf pan.
2. Combine flour, baking powder, sugar, salt, and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter, then fold in raisins. Pour into prepared pan.
3. Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

Makes about 16 servings.
