Introduction

Number of Servings: 8

Ingredients

    4 cups previously cooked regular long-grain rice
    6 Eggland's Best eggs, cooked (scrambled)
    1 (12 oz.) can Spam Lite, diced in 1/4 inch dice and fried
    1 cup frozen tiny peas, unthawed
    1 cup chopped green onion
    2 tablespoons safflower oil
    2 tablespoons Lite (reduced sodium) soy sauce

Directions

Rice should be cooked and refrigerated up to a day before for best results. Do not use instant rice. Eggs and diced Spam should each be cooked separately in a non-stick skillet and set aside. To prepare the finished dish, first stir-fry the rice in 2 T. oil in a wok or large skillet over medium high heat until it's hot and coated with oil throughout. Add Spam and scrambled eggs and stir to mix and heat through. Add soy sauce in center of pan and stir, leaving some of the rice white for more interesting color. Finally, add peas (still frozen) and chopped onion and stir a minute or two until heated through. Serve in bowls to retain heat longer.
