I love fresh veggies and roasting them is just another way to enjoy them! I usually season them with ground sea salt and ground pepper, you can also use Hidden Valley Ranch powder for something a little different! Ingredients

    1 cup fresh broccoli
    1 cup fresh cauliflower
    1 cup fresh carrots
    2 tablespoons olive oil
    Season to your liking

Directions

Cut up veggies to your liking, put them in a bowl and add the olive oil and seasonings. Stir well and place them on a sprayed baking sheet. Cook them on 350 for 15-20 mins, depending on how crunchy you like them...enjoy!
