    1/4 C dried bread crumbs
    1 tsp ground rosemary
    1 1/2 LB tenderloin roast (at room temperature)
    1/4 tsp salt
    1/4 tsp black pepper
    1 TB dijon mustard


Heat oven to 450. Coat roasting pan with cooking spray.
Mix bread crumbs and rosemary on a plate.
Season roast with salt and pepper.
Slather the mustard over the entire roast, and roll in the bread crumb mixture.
Place in roasting pan until it reaches desired temperature.
(Use a meat thermometer please- 130-140 for medium-rare, 140-150 medium, 150-160 well-done-so roasting time will vary)
Remove to a cutting board and let rest for 15 minutes. The temperature will continue to rise during resting.
Slice and serve warm or at room temperature
