Introduction

Adapted from my Dad's recipe which was not vegan. This is a hearty dish that is great for cold winter days or nights. I made mine gluten free as well. Number of Servings: 6

Ingredients

    6-10 small potatoes
    2 large carrots chopped
    20 pearl onions
    2-4 stalks celery chopped
    2 TBSP Olive Oil
    3-5 garlic cloves cropped
    1/2 tsp smoked paprika
    1 tsp Lawry's seasoning salt
    1/2 tsp Rosemary
    10 whole peppercorns
    1/2 tsp pepper
    1/4-1/2 tsp celery salt
    other seasonings to taste

Directions

Chop Vegetables as desired or shorten your prep time by using frozen Stew vegetables already cut. Cook your vegetables until soft in 2 quarts of water. Drain and reserve the liquid and veggies. In the same pot add Olive oil, garlic, seasonings and saute until fragrant - add flour and about 1-2 cups of liquid. Add vegetables and then remaining liquid until desired consistency - about half -simmer until thickened adding additional liquid as desired. Serve with some Sammie's bakery buns or other favorite Gluten Free crusty type bread.
