Ingredients

    1 can whole corn
    1 can cream corn
    1 egg
    1 8oz. pkg. cornbread stuffing mix
    1 chopped onion
    1 cup cheddar cheese, shredded

Directions

Preheat oven to 350 degrees. Grease 9x 13 baking pan. Mix all ingredients (3/4 c. of the cheese) in large mixing bowl, transfer to baking pan. Cook for 25 minutes then sprinkle with remaining 1/4 c. cheese, and cook for 20 minutes more. Remove from oven and let stand 5 minutes before serving. We make this into 8 servings.
You can make this a little healthier and less calories with low-fat cheese and non-fat sourcream. I didn't have these available for it today :o) enjoy!
