2 pounds potatoes, peeled and thinly sliced
    2 garlic cloves
    1 1/2 cups skim milk
    1 Tablespoon flour
3 Tablespoons finely minced fresh dill
    1 t butter
    2 t olive oil
    salt & freshly ground pepper

Preheat oven to 425 degrees. Cut the garlic in halves and rub an 8 x 8 inch glass baking dish with one piece of the garlic. Spray the dish with vegetable oil and set aside. Chop the garlic. Melt butter and olive oil in a sauce pan over medium heat. Add garlic. Whisk in flour. Slowly add milk whisking constantly breaking up any chunks of flour. Continue to whisk over heat until sauce begins to thicken.
Layer the potatoes in the baking dish, alternating with the sauce, dill, salt and pepper to taste. Pour the remaining sauce over the potatoes-it should cover the potatoes to a depth of three-quarters. Bake for an hour or until the potatoes are golden. Serve immediately.
