Ingredients

    2.5 cups pecan halves
    3 tbsp granulated sugar
    1.5 tsp coarse sea salt
    0.5 tsp ground ginger
    0.25 water
    1 tbsp apricot jam (I use the light version)
    1.5 tsp vegetable oil

Directions

On baking sheet, toast pecans in 350 F oven, stirring occasionally, for about 10 minutes or until fragrant. Remove from oven.
Meanwhile, in a medium bowl, combine sugar, salt and ginger; set aside.
In a large saucepan, bring water, jam and oil to a boil; reduce heat to medium-low. Add pecans; stir to coat. Cook, stirring, for about 3 minutes or until almost no liquid remains.
Transfer pecans to sugar mixture; toss until well coated. Spread on parchment paper-lined baking sheet. Return to oven and cook, stirring occasionally, for another 10 minutes or until pecans are no longer soft. Remove from oven and let cool on sheet.
Store pecans in a tight-lid container for up to a week.
