Number of Servings: 6

Ingredients

    2 red bell peppers
    4 oz or half cup of canned chilies (you can substitute hotter chilis if you like--I'm a wimp)
    1 Tbsp sunflower oil
    1 lb elk or venison
    1 onion, chopped
    3 cloves garlic
    2 carrots chopped
    3 cups hominy
    3 cups water
    3 cups beef broth
    2 tsp salt (or to taste)
    1 tsp pepper (or to taste)
    1 cup chopped endive or other bitter green

Directions

Heat the oil.
Add meat, onion and garlic and cook until meat is browned and onions are soft.
Put all the ingredients *except the endive* into a crock pot. Set on low for 6 or more hours.
Add the endive just before serving.
