Introduction

Number of Servings: 8

Ingredients

    1 lb sausage (link, bulk, turkey, or tofu)
    6 eggs
    2-10 oz pkg frozen chopped spinach, thawed and drained
    1 lb shredded part skim mozzarella cheese
    2/3 c low fat cottage cheese
    1/2 t salt
    1/8 t ground pepper
    1/8 t garlic powder
    pie crust for 2 crust pie

Directions

1. Remove casing from sausage, fry, and break into small pieces. Drain well.
2. Whisk eggs until lemon colored.
3. Add spinach and mix well.
4. Add ricotta, sausage, mozzarella, and spices. Mix until blended.

Pour into pie shell and cover with second shell. Use egg or milk wash on top.

Bake in 350 degree oven for 1 hour.

Pie can be baked for 30 minutes one day and reheated the next.

Ingredients can also be mixed day before and refrigerated. Pour off extra liquid before placing in pie shell.
