Introduction

This recipe was handed out by a member at a Weight Watcher. Everyone who tried making them thought they were great. They're high in fiber which makes them only 1 point (90 calories) each. This tool calculated it to be more calories and less fiber than what is listed on the recipe. I'm not sure if I've used the correct "bran" for the calculation. Ingredients

    1/4 cup applesauce
    1/2 cup firmly packed brown sugar
    1/4 cup molasses
    2 eggs, beaten
    1 cup skim milk
    1 1/2 cup bran (not cereal)
    1 cup whole wheat flour
    1 1/2 teaspoons flour
    1/2 teaspoon baking soda
    1 1/2 teaspoons baking powder
    1/2 cup raisins (optional); I sometimes use craisins or dried blueberries or dried cherries

Directions

Cream applesauce and brown sugar together. Add molasses and eggs. Beat well together. Add milk and then the bran. Combine dry ingredients and add to liquid ingredients. Add raisins, if desired. Bake in muffin pans at 400 F for 18-20 minutes. Makes one dozen muffins.
