    1c brown rice
    2 1/2 c low sodium chicken stock, vegetable stock or water
    juice of 1/2 lemon
    pinch sea salt
    1 tbsp lemon zest


preheat oven to 350
spray casserole dish with cooking spray
place rice in casserole dish. pour water or stock plus lemon juice over rice. add salt & place in oven
bake for 30-35 min. Stir lemon zest into rice and continue to bake for another 5 min or until liquid is absorbed

Yield - 4 x 1 cup servings
