The nice thing about these pastries is that you don't have to use any oil or butter. They basically steam just enough to still have texture. Ingredients

1 sheet of phyllo pastry
4 medium black mushrooms
1 cup cherry tomatoes
2 cloves of garlic
dash of salt for each
Directions
Heat up the oven to 180 degrees / 350 Fahrenheit. Slice the mushrooms in half horizontally. Roughly chop up the tomatoes. Add the garlic to the tomatoes. You can add any herb that you like to this mix.
Divide the tomato mix between the mushrooms and sandwich them. Season with the salt.
Cut the sheet of phyllo into four rectangals. Fold the phyllo over the mushroom/tomato towers and the seal the edges with a tiny bit of water or egg white. You can push a tooth pick down the center to make sure that it doesn't open up.
bake until the pastry is golden.
