Introduction

Number of Servings: 10

Ingredients

    1C bell pepper (red)
    1C onion
    1C celery
    1T butter
    1t oil EVOO
    3C brown long grain rice
    6C chicken broth or boullon cube
    1C shrimp
    thyme, parsley, orageno (or whatever you have on hand)
    garlic or powder
    salt, pepper
    2T tomato paste
    1 14oz can of diced tomatos
    splash of salsa

Directions

Cook than slice the sausage in a dutch oven with your oil. After cooked about 8-10 minutes, set aside in bowl. Than add your celery, onion & pepper. 8-10 minutes. add your diced tomatoes, tomato paste, garlic, salt, salsa, pepper and mix well. than add your chicken broth and bring to a boil. add oregano, thyme and rice and bring to a boil. than cover and simmer on Low for 20 minutes. (stir occaisionally). add shrimp & parsley and take off heat and let steam w\cover on for 15 minutes.
