Introduction
This is loosely based off of a traditional cucumber sandwich. I'm trying to keep my carbohydrate count down so I skipped the bread and used the cucumber as the base This is loosely based off of a traditional cucumber sandwich. Ingredients

1 large cucumber; peeled and seeded
2 Tablespoons of low fat cream cheese, softened
1 teaspoon of olive oil
1 teaspoon of red wine vinegar
1 tomato chopped
1 ounce of pepperoncini chopped
1/2 avocado, mashed
Directions
Peel cucumber and cut in half so that you have two short halves.
Use apple corer to remove center including seeds. Set aside.
In a bowl combine:
Cream Cheese, olive oil, vinegar, chopped tomato , pepperoncini and avocado. Using a hand blender, blend into a coarse paste.
Put paste into a ziploc bag and seal. Use scissors to snip off one corner of bag.
Pipe ingredients into cucumber
Slice cucumber into 1/2 inch pieces
