Ingredients

    Portabello Mushroom - Grilled, 2 serving
    Ricotta Cheese, part skim milk, .5 cup
    Beans, black, .5 cup
    *Bruschetta Sauce, Fresh TJ's, 2 tbsp
    *Kraft Mozzarella Finely shredded Part Skim cheese, 0.5 cup

Directions

400 deg. oven
cut stems completely off the portabllo caps, & place caps on an oiled baking sheet. Combine ricotta & black beans. Spread this mixture inside the caps. Do not overfill (will shrink slightly). add 1T bruschetta sauce on top of the filling and top each cap with mozzarella.
Bake 12-14. do not overcook. May have leftover filling. Next morning, fill a tortilla with the mixture & some bushetta -- 4 lunch.
