Introduction

This is almost vegetarian (could substitute the butter for more olive oil and it would be vegetarian). It's almost like a warm pasta salad (hence the main category), but I am eating it as my entree for lunch. Ingredients

    1 box of Barilla Plus rotini (14.5 oz)
    1 head of garlic
    1 container of fresh portobella mushrooms
    1 container of fresh grape or cherry tomatos
    1 white onion
    1 bunch of kale
    1 bunch of parsley
    olive oil
    3 tbsp of butter
    1/2 cup of water

Directions

Cook pasta to aldente following directions on the box. Drain and set aside. Cook garlic, onions, and mushrooms in the olive oil until onions start turning translucent. Add kale and water until it the kale wilts. Add the cooked pasta, tomatos, parsley, and butter. Once butter is melted and everything is mixed, serve. Makes 7 servings.
