Number of Servings: 8

2 C Flour (unbleached is best)
    2 Tbl Sugar
2.5 tsp Baking Powder (aluminum free is best)
1tsp Salt (which I usually Omit)
1/4 C Butter (or Shortening) (I use unsalted)
    1/2 C Milk (I use 2%)
    1 large egg slightly beaten

    2tbl milk
    2tbl sugar

Makes 8 scones

Preheat oven to 450F

Combine dry ingredients with a fork to aerate. Cut in Butter/Fat with pastry blender or two knives until it looks like fresh bread crumbs. Stir in milk and egg until ingredients are just moist. Gather into a ball and knead lightly on a floured surface about 12 times (DO NOT OVERKNEAD) Pat or roll into a circle about 1/2 inch thick.

Brush the top with milk and then sprinkle sugar on that. Cut into 8 pieces place on a cookie sheet about 1 inch apart bake about 10 minutes until lightly browned. Serve hot with butter, jam.
