    3 1/2 cups rhubarb
    1 1/2 cups water
    1/2 cup Splenda
    1 pkg sugar free strawberry Jello
    1 (8oz) can crushed pineapple
    1 cup fresh sliced strawberries
    1/4 tsp almond extract
    4 oz Cool Whip Free
    2 sheets Keebler reduced fat graham crackers, crushed


1. Thaw rhubarb, if frozen, but do not drain. In medium saucepan combine rhubarb and water. Cook and stir over medium heat for 15 minutes or until tender. Remove from heat and stir in Splenda and strawberry Jello until combined. Cover and chill for 2 hours.
2. Stir pineapple, chopped strawberries, and almond extract into rhubarb mixture. Fold in dessert topping.
3. Spray cooking spray on the bottom of a pie pan. Spread the crushed graham crackers over the bottom and press into the cooking spray. Spray a little extra on top.
4. Spoon the rhubarb mixture into the pie pan. Cover and chill for 4 hours or until set.

Serves 6
