A low-fat variation of a fall favorite. Won 2nd place (red ribbon) at church chili cook-off. A low-fat variation of a fall favorite. Won 2nd place (red ribbon) at church chili cook-off.
Number of Servings: 8

    1 lg can whole tomatos
    6- 8 oz tomato paste
1 can red kidney beans (rinsed)
    1 medium onion (diced)
    1 lb ground turkey breast
1 packet chili seasoning (any brand)
    1-2 Tbsp Olive oil
Tomato juice for thinning (I use V8 low sodium)
Other seasoning to taste (cilantro, cumin, cayenne pepper, salt, pepper etc...)

Dice and sautee medium onion. While sauteing, brown ground turkey in separate pot (using olive oil to prevent sticking) and blend whole tomatoes to desired consistancy (less for bigger chunks more for smoother texture). Add tomatoes and kidney beans to onions. (Adjust heat as needed to avoid boiling splatters).

When turkey is browned, add tomato paste and packet of spices.

Add turkey mixture to onion/tomato mixture.

Simmer to melde flavors. Add additional spices to taste. If chili becomes too thick or you would like to stretch a little farther, add tomato juice to thin without diluting taste.
