Number of Servings: 16


    2 lbs black beans
    2 cup onion
    2 bay leaves
    6 cloves garlic or garlic powder to taste
    Cumin seed or ground cumin to taste. I always start with one tbsp.
    Chicken Bouillon cubes to taste


Soak and drain beans.
Cover beans with water, add 2 bay leaves and and bring to a boil. Turn down and put lid on until beans are tender. NEVER add salt or acidity to firm beans. Wait until they are thoroughly cooked.
add onion, garlic, cumin and you can even add some chili powder if you desire. Once everything cooks down, adjust seasonings. I try not to add salt as the bouillon cubes supply plenty. If it's bland add another cube. It all depends on richness of spices and how much water has cooked off the beans.
serve with sour cream, cilantro, chopped tomatoes, shredded cheese and tortilla chips if desired.
