Ingredients

3 eggs
1 3/4 c sugar
2 tsp vanilla
1 c oil
2 c shredded zucchini
2 c flour
2 tsp baking soda
1/2 tsp baking powder
2 tsp cinnamon
1stp salt
Directions
Mix all wet ingredients and mix all dry ingredients separately. Then combine. Add zucchini last. Bake 350 for an hour.
This makes about 3.5 small bread pans or 2 regular size loaf pans
I have added nuts, dried cranberries. Both are good. I have used half whole wheat flour and half regular and it tasted the same. I have also used Sugar twin and it tastes the same. Also I have used less salt. All variations seem to work well
