    .5 TBS butter
    1 TBS vinegar
    .5 TBS cornstarch
    1/4C apricot preserves
    .5 TBS dry onion soup mix
    8 oz turkey breast cutlets
    Opt: salt and pepper


~Preheat oven to 375*
~Microwave butter just until melted and set aside.
~Combine vinegar and cornstarch in a bowl and stir until cornstarch dissolves. Add preserves, melted butter and soup mix. Mix well and set aside.
~Filet or pound out turkey until it is about 1/2" thick.
~Place turkey in the bowl with the preserves mixture and flip until thoroughly coated.
~Lay out a large piece of heavy duty tin foil and spray with non-stick spray. Place turkey in the center of foil and top with remaining preserves mixture.
~Fold foil together and seal tightly to make a packet.
~Place on baking sheet and cook for 25 minutes or until cooked through.

~Use caution when opening as the steam will be VERY hot.

~Season with salt and pepper to taste.
