Ingredients

    2 large potatoes, baked
    1/3 c sour cream
    1/2 c cheddar cheese
    1/4 c scallions, chopped
    1 tb granulated garlic
    1/4 c skim milk
    salt and pepper to taste
    paprika

Directions

1. Bake the potatoes for approx. 1 hour, or until a gentle push on them yields to the touch. Remove from over, let cool a few minutes
2. Slice potatoes lengthwise. Using a spoon, hollow out the innards, leaving a shell (the skin) intact. Set the skins in a shallow baking dish. Put the potato insides in a seperate bowl.
3. Add to the potatoes the sour cream, garlic, salt, pepper, milk, cheese and chives. Mix until smooth.
4. Spoon the potato mixture back into the potato skins. Top with shredded cheddar if desired and sprinkle with paprika for color. Bake another 10 minutes until cheese is melted and potato is warm.
