    1/4 c all-purpose flour
    1/4 tsp salt
    1/4 tsp pepper
    1 1/2 lbs beef stew meat cut into 1" pieces
    1 Tblsp olive oil
    3 garlic cloves, pressed
    3/4 tsp dried thyme leaves
    1 can beef broth
    1 can stewed or diced tomatoes, undrained
    1 medium onion cut into wedges
    2 large unpeeled potatoes(about 1 lb)
    2 c carrots, sliced
    1/2 c thawed frozen peas


Preheat oven to 350. Combine flour, salt, and pepper. Add beef. Stir beef until coated. Heat oil in skillet over medium heat until hot. Press garlic into oil. Add beef to skillet, reserving any remaining flour mixture. Cook until beef is evenly browned, stirring occasionally. Remove beef and garlic and place in oven safe baking dish with cover. ( I use a stoneware bowl with a cover). Sprinkle with the reserved flour mixture and thyme. Add beef broth, tomatoes and onion. Cover. Bake 1 1/4 hours. Meanwhile slice potatoes into 1/2" thick slices. Cut slices crosswise in half. Slice carrots. Remove baking dish. Stir in potatoes and carrots into stew; cover and back for 1 hour or until beef and vegetables are tender. Stir in peas. Serve.
