this could be made even lower in fat by using fat free sour cream and cheese. personally i chose to leave the cheese as is and used light sour cream (instead of the full fat the original recipe calls for). you could also lower the sodium by using plain wild rice instead of the zatarain's new orleans style wild rice that i calculated here.

it's pretty simple to make and is very filling! hope you like it as much as our family does!

Ingredients

    1 tbsp plus 1 tsp olive oil
    1 small onion, diced
    1 cup mushrooms, sliced
    1 tsp salt
    1/2 tsp garlic powder
    1 lb chicken breast (boneless, skinless, cut into 1/2" pieces)
    1/2 c light sour cream
    1 c shredded cheddar cheese (plus some additional for sprinkling on the top)
    3 c cooked wild rice

Directions

1. preheat oven to 350

2. place 1 tbsp olive oil in a large saute pan over medium heat and cook the onions for 2 minutes

3. add the mushrooms, season with 1/2 tsp salt and cook another 4 minutes or until the mushrooms are tender and the onions are translucent.

4. remove the mushroom mixture and place in a bowl.

5. heat 1 tsp oil in the saute pan and cook the chicken, garlic powder and remaining 1/2 tsp salt for 3 minutes or until cooked through.

6. combine all ingredients together, place in 8X8 baking dish and sprinkle with additional shredded cheese.

7. bake for 20 minutes.
