    1 (28 oz.) package of frozen potatoes o'brien
    2 tbsp olive oil
    4 eggs
    1/2 cup shredded cheese


Brown potatoes with olive oil in skillet

Once potatoes are brown and slightly crispy, add the 4 eggs (I prefer them scrambled)

Stir until eggs have firmed up and add cheese.

Heat on low flame until cheese melts
