Great over soba noodles or a pasta of your choice. Great over soba noodles or a pasta of your choice.
Number of Servings: 4


    *Bok Choy (1 bunch stems separated, cleaned, sliced across, diced into 1/2 inch pieces, separate stems from leaves)
    *Peanut Oil, 2 1tsp
    Onions, raw, 1 small
    Garlic, 4 cloves
    Ginger Root, 3 tsp
    *Soy Sauce, 3 tbsp
    1/4 tsp. red Pepper Flakes


Saute bok choy stems and onion over medium heat with oil for about 5 minutes. Add garlic, ginger and red pepper flakes. Saute for another minute or so. Add leaves and soy sauce, reduce heat, cook for another minute.

Add in soba, rice or pasta noodles and mix to coat (calories for pasta is not included).

Serves 2-4.
