    1 1/2 cups milk
    1 1/2 cup rolled oats, quick
    1 egg
    1/2 cup canola oil
    1 cup all purpose flour
    1 cup whole wheat flour
    1/2 cup firmly packed brown sugar
    3 1/2 tsp baking powder
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    2 cups grated zucchini


Preheat oven to 400F Lightly spray 36 mini muffins tins with nonstick cooking spray.

In a bowl, cover oats with milk. Let stand for 5 minutes. Add the egg and oil; blend well.

In another bowl, combine the all purpose flour through nutmeg and blend well. Add the oat mixture, stirring just until moist. Fold in the zucchini.

Spoon the batter into the prepared mini muffin tins, filling to the top. Bake in preheated oven for 15 to 20 minutes.

Makes 36 mini muffins.
