Ingredients

    2 cup Quaker Masa Harina
    1 and 1/3 cup warm water
    1 pound pork loin top lean boneless chops
    1/8 teaspoon cumin powder
    1/2 teaspoon lawrys garlic salt
    1/2 teaspoon, lawry's garlic powder
    1 Tablespoon McCormick Tex Mex Chili seasoning (in packet)
    Corn husks

Directions

Makes 1 dozen tamales

In a clean sink or large pan, place corn husks in hot water and soak for half an hour. Once soft, strain husks and place them aside covered to keep soft for wrapping the tamales for cooking.

Mix the warm water with the harina and set aside.

Place the loin chops in a pan with 1/4 cup water mixed with seasoning and 1/2 teaspoon olive oil. Season meat with Add mixture to meat and cook on medium heat covered for 20 minutes until tender. Grind meat in blender with 1/4 cup of water. Use meat as filling.

Make the dough into ball shapes and flatten into 6-8 inch tortillas, add 1 tablespoon of meat filling, roll like a burrito. Place this in a corn husk and wrap around the tamale like a burrito.

Place in a steamer and cook for 25 minutes until dough is cooked through.

You can serve these with fresh salsa, lime and sea salt or cheese sauce. Up to you on you caloric intake.

    This sounds like an extremely LOW fat way of making tamales. I learned the true Mexican way of tamale making, which includes a LOT of lard. Of course, it tastes great, but I'm sure anybody's insides would be very hateful after eating just one. I will give this recipe a try since we love tamales! - 1/4/11
