Introduction

Quick and oh so easy! This one has broccoli and onions, but the basic recipe is easily adapted to whatever combination of flavors you like and have on hand. It's a great way to rejuvenate leftovers! Ingredients

    9" frozen pie crust
    1/2 cup chopped onions
    3 Tbsp I Can't Believe It's Not Butter
    1 cup finely chopped broccoli
    3/4 cup shredded lowfat cheese of your choice (I like 2% colby-jack or cheddar)
    1/4 cup scallions
    1-1/2 C. Egg Beaters

Directions

Preheat oven to 350.

Sautee onions in the I Can't Believe It's Not Butter until they are clarified and softened. Remove from heat.

In frozen pie crust, spread chopped broccoli, 1/2 C of the shredded cheese, and about 2/3 of scallions. Top with the hot onion/butter mixture.

Pour the Egg Beaters over the mixture in the pan. Top with remaining cheese and scallions.

Bake for approx 40 - 45 minutes, until a knife inserted in the center comes out clean and the quiche doesn't "jiggle" when moved.

Makes 8 servings.
