Ingredients

    Cook beans (mixed if you like) until tender to yield 2 cups beans.
    Cook rice until barely tender to yield 2 cups rice.

    Saute onion in oil until translucent. Add frozen vegetables and saute until browned. Add tomatoes, water, beans and rice. Bring to a boil, then simmer until rice is tender. Add salt and seasoning to taste.
