    1 cup (dry) couscous
    1 can chickpeas (garbanzo beans), drained
    2 tbsp chopped fresh mint
    2 tbsp chopped fresh coriander (cilantro)
    1 tbsp olive oil (optional)
    Juice of 1 lemon
    Salt to taste


Cook the couscous according to the packet instructions. Stir in all the other ingredients and let the dish sit for 5 or 10 minutes to allow the flavours time to mingle. This makes a great dish in its own right - it's very filling and if I have it for lunch I don't need to eat again before dinner. It's also very tasty as a side dish, with lamb.
Omitting the olive oil cuts the calorie count by 60 per serving.
