Introduction

Here is a lovely banana compote which is great on pancakes, as well as in oatmeal. Here is a lovely banana compote which is great on pancakes, as well as in oatmeal.
Number of Servings: 6

Ingredients

    1.5 c. orange juice
    .25 c. lemon juice
    .25 c. maple syrup
    2 tbsp. brown sugar
    .25 c. unsalted butter
    2 large bananas, sliced

Directions

In a stainless steel pot, combine the orange and lemon juice and boil for 15 minutes. Reduce the heat to medium and add the maple syrup and brown sugar. Stir until the sugar has dissolved. Remove from the heat and whisk in the butter. Cool Slightly and add the sliced bananas. Keep warm, but do not boil again. (The butter will separate if the compote is boiled and result in a grainy texture.)
