Introduction

A warm spinach salad for winter weekenights, goes great with everything. Superfast for when you are in a hurry! And who doesn't like bacon? A warm spinach salad for winter weekenights, goes great with everything. Superfast for when you are in a hurry! And who doesn't like bacon?
Number of Servings: 4

Ingredients

    10 oz fresh baby spinach
    4 slices turkey bacon
    2 minced shallots
    1 Tbs olive oil
    2 Tbs balsamic vinegar

Directions

Slice turkey bacon into lardon shapes, brown in a non-stick pan. Set aside.

Into the empty skillet add oil and shallots for 3 miutes. Add vinegar for a couple more minutes. Top spinach in a serving bowl with oil and vinegar dressing. Toss to coat.

Add turkey bacon, salt and pepper. Ready to serve.
