Introduction

This is a dish I just made up for my dinner tonight...and it was so good that if I had it at a 4 star restaurant it would have fit right in. This is a dish I just made up for my dinner tonight...and it was so good that if I had it at a 4 star restaurant it would have fit right in.

Ingredients

    a small salmon fillet..(I used wild Atlantic salmon)
    a fresh tomato salsa - the kind you buy in the refrigerated section. about a 1/4 cup
    1 tsp honey,
    1/2 tbsp capers
    2 tbsp of Balsamic vinegar...


Directions

gently stir the sauce ingredients together and pour over the salmon in a small baking dish. Bake at 425 degrees for 15 minutes if fresh and 30 if frozen.

Then light some candles, put on some music and enjoy!
