    3 egg whites, slightly beaten
    Olive oil non-stick spray
    1 clove garlic, minced
    1/2 tomato, diced
    2 Tbsp fresh basil, chopped
    2 cups fresh spinach


Arrange spinach on a plate. Spray non-stick frying pan with olive oil spray. Lightly brown minced garlic on medium heat for 2 minutes. Add eggs, and top with tomato and basil, cook for 4 minutes or until eggs are cooked through. Flip and cook another 2 minutes. Top spinach with Frittata.
